Cranberry Vodka

As cranberries come to the fore at Christmas time why not get an extra punnet and make a great drink to have when the BBQ and al-fresco dining season comes around again.

Take a screw or clip top jar of at least 1 litre capacity.
1 punnet of cranberries

4oz Sugar (white is just great but you can ring the changes with brown or Demerara etc. or even honey as they will change the flavour)

1 litre Vodka (or any white spirit such as Bacardi or gin)prick each cranberry twice (easy if you use a large darning needle and just thread them onto the needle over a bowl where they will drop as you keep pushing others on)

Stir the sugar into the berries cover with cling film and leave to stand for a couple of days stirring form time to time.
This starts a maceration process and starts to draw out the juices from the berries.

After standing place it all into the screw/clip top jar and top up with your chosen spirit. Fasten and shake firmly but not vigourously and put in a dark place for 3 months.
Check from time to time and give it a gentle shake. Taste after one month and add more sugar to taste.

Strain and bottle.
When you next have a BBQ chill your special brew for a while

Make a long drink by adding a couple of ice cubes and top with lemonade
Use as a cocktail base with still or sparkling wine with a couple of berries dropped into the bottom of the glass or on a cocktail stick
If you are really steady the drizzle down the side of a glass of wine allowing to settle as a rosy glow beneath the clear wine.
Or just use your usual mixer like tonic water

Whichever way you chose I am sure your friends will be impressed.
Don't throw the berries as they can be used in deserts, cocktails, or in sauces/gravies for game or rich meat.

squirrels are often out their trees but never short of nuts.
