Go Get them Elderflowers

Just a heads up for the uninitiated, I've noticed that the elderflowers in our hedgerows down here in Zunny Deb'n are up and showing lovely, frothy selves.

Now, you will have no more than about 2 weeks to gather in some heads for making elderflower cordial and elderflower wine/champagne before they are over and start to turn to berries.

Given that we all live in different parts of the country and our season is marginally ahead of those in Northern Climes I just thought I'd mention it.

I have found that the flower heads also freeze quite well and retain that lovely aroma. If you are lucky enough to have a vac-packer, even better, as they also take up very little room when compressed and keep the flavour/aroma better.
